Kentucky Oatmeal Pancakes

oatmeal pancakesThose of you who know me, never questions my recipes – I am a professional, certified, bonafide, connoiseur of fine food.  This is one of those recipes – totally to die for.
I make these pancakes for my boys nearly every Sunday – have for several years and it is the most requested Sunday breakfast/brunch food by far.  Now add some Kentucky Pepper Bacon to this meal to make it fit for Barbaro, Giacomo, Smarty Jones or Secretariat.  

1 cup old fashioned or quick cooking oats 1/4 cup all purpose flour 2 tablespoons Sugar 1/2 teaspoon baking powder – Calumet, of course – http://www.CalumetFarm.com

1/2 teaspoon baking soda1/4 teaspoon Salt1 1/4 cups of Buttermilk – or I cheat sometimes and use regular milk or half and half2 eggs
1/4 stick of unsalted butter, melted
1 teaspoon of Mexican Vanilla – get the good stuff from the Mexican Grocery
 
Combine the first 6 dry ingredients in a large bowl.  Whisk buttermilk, eggs, melted butter and vanilla in a medium bowl – I always use stainless bowls – they are easy and inexpensive.  Add the two bowls of dry and wet and let sit to thicken – an hr preferably, but who has time like that on a Sunday morning – mine usually sets up 32 seconds and in the pan they go.
 
I almost exclusively use cast iron and this recipe is no exception.  Preheat that monster-sized cast iron skillet.  Then I spray olive oil in, ladle the pancakes in and you are rolling.  
 
Now you know how regular pancakes bubble, then you know its time to flip ‘em?  These won’t – you have to watch them.
 
Make some home-made whipped cream and pop some blueberries on top of that – whoa.  We only have real VT, WI or NY Maple Syrup on hand, so that always works, but I like to do the whipped cream and berries from time to time.
 
Now if you are cringing about the home-made whipped cream – stop.  Let me show you how easy this is:
 
1 pint of whipping cream/heavy cream – you get it in the Milk section at your grocery
1 tablespoon of sugar
1 teaspoon of Mexican Vanilla
Put it in the Kitchenaid Mixer (or hand mixer) and whisk it on high for a few minutes – you’ll know when its ready – and you want to talk about impressing guests?  They always remember the little things that make people feel special.
